As promised in my previous popsicle post, I am going to be hunting down the best popsicle recipes for this summer! Since yesterday was officially the first day of summer (CAN YOU BELIEVE IT?) I made this strawberry, yogurt, and granola popsicles to celebrate! Try them out! And bonus – these can be great for breakfast too because of the granola!
Ingredients:
– 2 cups vanilla yogurt – make sure to reserve 1/2 cup for strawberry yogurt blend
– 1/2 cup sliced strawberries
-1 cup diced strawberries
-1/2 cup granola
Instructions:
1. In a blender, puree 1/2 cup of sliced strawberries and 1/2 cup of vanilla yogurt together until the consistency is smooth.
2. Layer the popsicles: 1 tsp cubed strawberries, 1 tbsp vanilla yogurt, 1 tbsp strawberry yogurt blend, 1 tsp granola – repeat until the mold is filled to the top.
3. Place the cover on the mold and freeze for at least 6 hours.
4. To remove the popsicle from the mold, run the molds under hot water for at least 10-15 seconds.
